Gluten-Free Menu 3-18-12


Here are some meal ideas for you from what we had last week. You can always stop by my Facebook page in the evenings to see what we’re eating for dinner.

chicken cacciatoreChicken Cacciatore – I brine the chicken breasts before putting them in the slow cooker.  The chicken turns out so nice an moist.

chicken scampi with vegetablesChicken Scampi – I added zucchini to the onion and pepper in the recipe to make it a complete meal.

baked salmonBaked Salmon – This week I added Old Bay seasoning to the salmon instead of basil and parsley.  It was a delicious meal with brown rice and asparagus.

Meatloaf – I used this recipe but baked it in the oven and made mashed potatoes on the stove.

meatballs and spaghettiSpaghetti and Meatballs – I made extra meatloaf the night before and used some of it to make meatballs.  The next night the meatballs just needed to be reheated.

I baked muffins which I’ll be sharing with you tomorrow.  I also made a batch of peanut butter cups which one of my kids has been asking for.  They’re so good!
