Gluten Free Menu 12-9-12

Once again, I apologize for not getting the December menu plan done.  At this point I have to say that it’s not going to happen.  That’s just how December is.  I will definitely try to get one done for January.  In the mean time, here are a few gluten-free menu ideas for this week.

green beans almandine

Rotisserie Chicken, French Fries, and Green Beans Almandine – Remember, not all rotisserie chickens are gluten free.  Read the labels.

meatballs and spaghetti

Spaghetti with Meatballs and Salad – For years I didn’t make meatballs because I didn’t like frying them.  Once I learned to bake them, I started making them a lot.

Chicken Pot Pie – I hadn’t made this recipe in a long time.  My family and two friends that the boys had over really enjoyed it.  I increased the pot pie amounts a little and put it in a larger dish, but only used one biscuit recipe.

Venison Tenderloin, Broccoli, Roasted Potatoes – I’ve been helping my brother use up meat from his freezer.  My boys all like venison but no one really loves it.

Crock Pot Chuck Roast with Veggies, Green Beans, Potato Latkes – I’ll be sharing the potato latkes recipe at Lifetime Moms this week.

rice and quinoa pilaf

Baked Chicken Thighs, Rice & Quinoa Pilaf, Salad – I added a honey mustard salad dressing to the chicken, which was good.  Baking the chicken results in better presentation, but my family prefers that I cook it in the crock pot until it’s falling off the bones.
