Mushroom & Beef Sauce, Rice & Broccoli – In Friday’s kitchen tip I shared about the beef I used in this sauce.
Salmon Cakes, Stuffing, & Green Beans Almandine – I tried my stuffing recipe using Udi’s bread. I’ll be sharing that at Lifetime Moms later this week. I didn’t eat much of it because of the carbs, but it was good.
Chicken, Leftover Rice & Stuffing, Salad – I roasted the chicken, but it could also be cooked whole in the crock pot.
Easy Chicken Divan – The chicken and broccoli were pretty filling for most of us, but there was still a little leftover rice for my carb eater.
My husband and I were away with friends for several days. The boys had leftovers to eat, food in the freezer, and money for going out. It’s nice being able to leave our kids for a couple of days and not worry about them.
