Life has been very busy, so here are a few relatively quick but very tasty meals that we had last week.
Rotisserie Chicken, Salad – This was a store-bought, fast-food meal that I picked up at the grocery store. Finding a gluten-free rotisserie chicken is not always easy, but there are a couple of stores in our area that carry them.
Spaghetti & Meatballs, Green Beans Almandine – I skipped the pasta and just ate the meatballs and green beans.
Zucchini Pizza topped with leftover chopped Meatballs – My husband picked up some different varieties of goat cheese on a recent trip. I used Drunken Goat on this pizza and it was very good.
Grilled Steak, Roasted Sweet Potatoes, Broccoli – I’ll be sharing the sweet potato recipe next week. They were very good.
Crock Pot Venison Roast with Apples & Onions, Broccoli – I placed sliced onions and apples in the bottom of the crock pot with rosemary and garlic and a little water, put the venison on top, and cooked it on low. The family enjoyed it.
Zucchini and Sausage with Toasted Udi’s Bread – I actually had this meal twice. I spent one night with my parents and fixed it for them. They both loved it. When I got home the next night, I had all the ingredients so I made it for my family. They loved it too, though it wasn’t new to them.
