There was a lot of traveling and eating with extended family last week. Here is roughly what we had and my recipes that are closest to it.
Baked Chicken, Rice, Broccoli, and Pineapple – Between me and my sister, there are multiple foods that need to be avoided. Feeding us can be a challenge, but simple meals are the best way to go.
Hamburgers, Sweet Potatoes, Squash and Onions
Roast Beef, Potatoes, Vegetables – We actually had this meal twice during the week, but it was delicious both times. Once it was all cooked in the crock pot, the other time, the roast was cooked in the oven.

Chicken Parmesan, Pasta, and Salad – I didn’t have pasta or cheese, but I really enjoyed the pasta sauce with my chicken.
Salmon, Mashed Cauliflower, and Salad – I added a little goat milk gouda cheese to the cauliflower. I enjoyed it, but a couple of family members did not.
Leftovers – A great standby for busy evenings.
