Gina of Gluten-Free Gourmand was one of the first gluten-free bloggers I met online. She participated in my first Wednesday carnival which was originally called What’s for Dinner Wednesday.
When Gina recently contacted me about her gluten-free products, I knew they would be good. She sells all purpose flour, pastry flour, and several mixes. I sampled her all purpose flour mix.
I like the combination of flours in this mix: organic brown rice , white rice, sorghum, organic amaranth, potato, and tapioca. The flour mix does not contain any gum, so that should be added with our recipe if needed. That’s a big advantage for people who need to avoid corn since xanthan gum is usually derived from corn.
I used the flour mix to make chocolate chip nut muffins and they turned out perfectly.
