This is a very easy gluten-free dinner, and my kids rave about the chicken. I usually have a bag of frozen chicken breasts in my freezer. They are nice to use when I need a simple meal.

Favorite Chicken Breasts
 

Ingredients
  • Olive oil
  • Italian salad dressing
  • Powdered Ranch dressing mix (gluten-free)

Instructions
  1. Put a little Italian salad dressing and a little olive oil in the bottom of a rectangular baking dish.
  2. Place the frozen chicken breasts in the dish and add a little of the salad dressing and olive oil on top.
  3. Sprinkle the chicken pieces liberally with powdered ranch dressing mix.
  4. Bake at 350 degrees for 45 – 1 hour or until done. If using chicken that is not frozen, your baking time will be much less.

Notes
You can buy powdered Ranch dressing mix in packets. I have a container I get at BJ’s Wholesale which is more economical. Remember to check the ingredients of your salad dressings to make sure they are gluten-free.

    Lisa ~ I don't remember. I don't use it any more because it contains dairy. I just use Italian dressing (usually a home made version) now.

    Did you know that Organicville now has a Gluten Free Dairy Free Ranch dressing? Our whole family loves it but it is pricey. I NEED to find those ranch seasoning packets. I was hoping something like that existed. Didn’t see it at Sam’s though…will check Amazon. Thanks! Looks yummy and I LOVE it that you don’t need to defrost the chicken first since I either forget or it takes too long in the fridge! Also, did you see the article about quinoa being contaminated with barley? Thanks again! Will make it soon… maybe tomorrow.

    • I will have to look for Organicville ranch dressing. I don’t miss it, but my gf son is trying dairy free and he really likes ranch dressing. I haven’t read about quinoa contamination. I’ll look for it. Thanks.
