Beans and Bacon (Slow Cooker)

Ingredients
  • ⅓ cup lentils
  • 12 strips bacon, fried and cut in pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (15 ounce) can small red beans
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can diced tomatoes with liquid
  • 1 (8 ounce) can tomato sauce
  • 1 cup beef broth
  • 2 Tablespoons ketchup
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • 1 bay leaf
Instructions
  1. Boil the lentils in 1⅓ cups water for 20-30 minutes. Drain.
  2. Cook the bacon and cut in pieces.
  3. Chop the onion and sauté until tender. Add the garlic and cook for one more minute.
  4. Combine all ingredients in a crock pot.
  5. Cover and cook on high for 3-4 hours.
  6. Remove the bay leaf and serve.
