Potato Zucchini Mash

Ingredients
  • 3 pounds potatoes
  • ¾ cup milk
  • 2 cups chopped zucchini
  • ⅓ cup chopped green onion
  • salt and pepper to taste
Instructions
  1. Peel, cook, and drain potatoes.
  2. While the potatoes are cooking, combine the milk, zucchini, and green onion in a small saucepan. Heat to a simmer, cover and cook 5 – 10 minutes until the zucchini is soft.
  3. Use a hand masher to mash the zucchini mixture. Add this along with salt and pepper to the potatoes and mash the potatoes with a hand masher or electric mixer.
