Cooqi Pizza Mix Review & Giveaway

Cooqi-logoCooqi Gluten Free, which was founded by Judy Malmon, started as a retail bakery in St. Paul, Minnesota.  It is now a line of artisan, organic whole-grain gluten-free baking mixes and flours which are produced in a dedicated gluten-free facility.

Cooqi (sounds like cookie) Gluten Free products include:

  • Multi-Purpose Flour
  • Cake and Pastry Flour
  • Pancake Flour
  • Pizza and Pita Mix

I had the opportunity to try the pizza and pita mix. There are a number of things I liked about it.

It makes good pizza!  My whole family ate it (gluten free and not) and everyone liked it.

According to the package directions, each bag of mix makes four 12-inch pizzas.  According to the web site it makes six.  It depends on how thin or thick you like your crust.  I got four pizzas out of a package, and they were fairly thin, so I think that’s more realistic.  Still, four pizzas per mix is very good.

It is allergy friendly.  The mix is gluten, dairy, soy, nut, and egg free, and does not call for any of those ingredients to be added to it.

It is easy to use.  I like the convenience of a mix at times.  On those busy Friday evenings when I wanted to make pizza but didn’t have time to do it from scratch, this was an easy and good substitute.

I did find that my dough turned out too wet when I followed the instructions on the bag.  It was so soft, I just spread it on the pizza pan with a spatula.  However, it still turned out well.

I recommend that you hold back some of the water and add more as needed.  The second video on this page is very helpful in understanding what the consistency of the dough should be like.

The video also shows you how the mix can be used to make pita bread, bagels, baguettes, and focaccia bread!

    Your pizza looks delish! Having been GF for the last 9 yrs, pizza is the thing I miss the most. My local pizza parlor ordered pre-made GF crusts for me to try, but, they didn’t fit the bill. I haven’t been able to make a decent gf crust, even though I have tried multiple times. This sounds like heaven to me!

    Wow! That pizza looks delicious!!!! My entire family has celiac disease. We are always trying to find new products and ideas to try. My 9 yr. old daughter is hard to please sometimes and she loves food that looks and tastes “Real”. If it pleases her and she is happy, then I have hit the jackpot.

    I would LOVE to try the Cooqi mix! I really like the ease and taste of your biscuit crust recipe, but my hubby and daughter are still looking for that crust that meets their pizzeria ideal.     I am actually excited for the Pita mix! I grew up with a middle eastern background, and it so soooo hard to not have pita and hummus. The thought of eating warm pita gain with hummus and other middle eastern foods is super exciting. :-) I have yet to find a good gluten free pita. My mouth is watering thinking about it! LOL :-)

    Our family loves pizza but since going gluten, casein free – we have been struggling to find a great tasting pizza crust. We’ve tried a number of the popular brands…….and found a couple that were ok – BUT a few weeks ago we were blessed to find out about Pizza Luce. (We just move to cities a short time ago.) Their GF pizza crust was FANTASTIC which I am told is Cooqi crust. LOVE LOVE IT!! My 7 year old son has refused to eat pizza………until we convinced him to try Pizza Luce — and now he requests pizza at least once a week. :) Would love to win and try the pita bread too!!! Thank you.

    The crust in your photo looks delicious, a beautiful golden brown. So many GF crusts come out a pasty, unappealing white! I would love to have the opportunity to try this mix. This mix meets all of my needs, being GF, SF and DF. Trying to find a mix that meets all of those criteria is not easy. And organic too? Real non-GMO food! And to eat a pita again? Heaven!

    I would really like to try this because it doesn’t require eggs and it is corn-free too! My son is 12 and he is allergic to gluten, milk, soy, eggs, corn, legumes, peanuts and tree nuts. Its hard to find mixes or products that dont contain or require one of those allergic foods. I have been making him biscuit pizzas for the times when his brother and sister have pizza. This looked so good and so similar to the pizzas the other kids get to eat. Would really love to win this :)

    I would love to try this because I have yet to try to make my own pizza mix, let alone pita bread or a bagel! I really want to try to make things more often as opposed to buying frozen food so I can eat healthier (yes, pizza isn’t the most healthy thing in the world, but I’m finally adding veggies to it!). My boyfriend lives with me and still eats gluten, so I’m always trying to find things that are gf and yummy for him, so his gluten food will slowly disappear. Plus, I’m just finishing grad school (despite all the medical issues that were thrown my way this past year), so it’d be awesome to get something new to try out for a celebration! (and I never win things, so just winning something would be great too).
    Side note: I read your blog everyday, recommend it to others when I find out they have to be gf, and I love that you do this. I was in my freshman year of my undergrad when I was diagnosed, so there were very few options (especially since I live in a tiny tiny town in Ohio). Finding your blog has been amazing and I’ve found a lot of awesome recipes in it! Your surfing Saturday blogs are great as well. Check out Simon the Cat videos on youtube.
