Chocolate chip cookie bars combine the classic flavor of chocolate chip cookies with the convenience of a bar. This gluten-free version is delicious.
Chocolate Chip Cookie Bars

Ingredients
- 1 ½ cups rice flour
- ½ cup potato starch
- ¼ cup tapioca starch
- ¼ cup sweet rice flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon xanthan gum
- 1 cup butter, softened
- ¾ cup brown sugar
- ¾ cup granulated sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 cups (12 ounces) chocolate chips
- 1 cup chopped nuts (optional)
Instructions
- Combine the flours, starches, baking soda, salt and xanthan gum in a small bowl.
- In a mixing bowl beat the butter, sugars and vanilla.
- Add the eggs one at a time and beat well.
- Gradually mix in the flour mixture.
- Stir in the chocolate chips and nuts.
- Spread into a jelly roll pan sprayed with cooking spray. Bake at 375° for 20 -25 minutes.

I really must try these in bar form! I have made GF chocolate chip cookies, but not in the bar form. Wow, those look good!
So happy to find these! Used to make these bars growing up. I have little patience for cookies so bar style is wonderful. Still challenged by gluten free baking. Most does not meet my expectations.
I have been gluten, dairy, and soy free for a year. In all this time I have tried many, many baking recipes. Some were edible, most were awful. This is my favorite recipe of all. Thank you so very, very much for posting it. I stumbled upon it way back in the first couple of months having to eat this way. For most of the past year it was my go to recipe when I felt like I was never going to be able to eat a decent baked good again. I don’t live where there are any bakeries that make even one item I can safely eat. Finding grocery items to try all the many different recipes has been difficult, usually I have to mail order items. This recipe tastes like something I used to bake full of gluten, dairy and soy. I can’t say it enough times THANK YOU!
