Broccoli Quiche with Hamburger

Broccoli Quiche

I’ve always been a huge fan of eggs, and since being on a low-carb diet, I enjoy them more than ever.  Quiche is a great way to combine eggs with vegetables and protein, and if you’re cutting calories, you can simply omit the crust.  This broccoli quiche includes hamburger or sausage for a complete breakfast, brunch, lunch, or dinner meal.

Broccoli Quiche with Hamburger
Recipe type: Main Dish
  • 1 pound ground beef or sausage
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces broccoli florets
  • ½ cup mayonnaise
  • 1 cup milk (or substitute)
  • 6 large eggs
  • 2 Tablespoons potato or corn starch
  • 1 Tablespoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon pepper (or to taste)
  1. Sauté the ground beef and onion until cooked through.
  2. Add the garlic and cook for another minute. Drain.
  3. Cut the broccoli into very small florets and steam about 4 minutes or until just tender and bright green.
  4. Combine the mayonnaise, milk, eggs, starch, mustard, salt and pepper in a large bowl, whisking until smooth.
  5. Stir in the broccoli and ground beef mixture.
  6. Spoon into two greased pie plates and bake at 350° for 35 minutes or until set in the center.




  1. I made this tonight and it was delicious! My bf is diabetic and I have problems with gluten, so this was perfect for us. I cut this in half and I added a couple of handfuls of shredded cheddar cheese (because we love cheese!). Yum~~will be making this again and again! Thank you!
