I’ve never heard of this tip. Sounds interesting. I make several kinds of skinny mashed potatoes, and will give it a try this with one of them.

I have never heard of that before. But then I like my mashed potatoes creamy. I still want to try it though!
Hmmm, that’s a new one to me. I do add baking powder to my potato cakes (made from leftover mashed potatoes) though, because mom always did. LOL, but true. Not sure it makes them lighter though. Must try on both and pay better attention.

Been doing this for decades. It is especially good for keeping the potatoes light and fluffy when making early and keeping in the pan until reheating at serving time.
This was my mother’s trick, passed on to me and I am 70. It works!
