Gluten-Free Wednesdays buttonHi everyone!  I hope you all had a wonderful Thanksgiving.  I sure did.  We gathered with my extended family, and I was excited when I realized that the entire main meal (not dessert) was gluten free.  It wasn’t all dairy free, but at least my son was able to eat anything he wanted and we didn’t have to worry about cross contamination.

Monthly Theme:  November’s theme is stuffing.  I told you I would be looking for stuffing recipes to highlight through this week, but now that Thanksgiving is over, I think we should move on to chocolate which is December’s theme.  I’m particularly looking for chocolate desserts such as fudge, but wanted to leave the category open.

    Thank you for highlighting my Cornbread Stuffing and squash from last week. I’m so glad you liked it! This week I’m sharing about Marshmallow Crispy Treats that I rediscovered after finding the Rice Krispies® gluten-free version in the grocery store last weekend. Now I’m reeling from too much sugar, but I have enjoyed the old favorite sweet snack.

    Our entire Thanksgiving dinner was gluten and dairy free. Our desserts were gluten free, but did have some dairy. Hopefully by next year I will have found a way to make our favorite pies dairy free too.

  6. I’m so happy you had such a wonderful Thanksgiving, Linda! It remains my favorite holiday. :-) Our meal was gluten free and mostly dairy free, except for two pies my sister brought. It worked out well. I was especially tickled when my mother loved the bread I made from the Paleo Comfort Foods cookbook, so much so that she took 1/3 of it home with her. ;-)

    Thanks so much for featuring my stuffing. It looks like many came through with stuffing for Thanksgiving!

    Chocolate, with fudge preferred? It seems like I’m going to have to make my mother’s fudge in a healthier way and/or share a microwave fudge recipe from back in the day.

    Happy I’ve checked out a few of the recipes shared already. Can’t wait to check out more. :-)

    I am submitting a very healthy, allergy-friendly recipe: chocolate pumpkin brownies.
    This brownie is free of: grain, gluten, dairy, eggs, soy, cane-sugar, and Xanthan gum. To me it tastes very “fudgey” and the closet thing to fudge I can eat.

    This is one of four recipes I featured in my chocolate + pumpkin series.

I shared 2 recipes: Chocolate Cupcakes (Sprouted GF Flour & Egg-Free) recipe, they are super moist from the fresh “applesauce” and SO yummy! -and- a Celery Root Mash recipe, it’s SO delicious and better than mashed potatoes in my opinion.   11. Glad to hear you had a good Thanksgiving. I shared my review of Jules Dowler Shepard’s Free For All Cooking. I tried her tortilla recipe and the crustless quiche. Both were delicious and dairy free too.

  13. I linked up a post to 2 Pumpkin Cookie recipes today. Recipe 1 uses whole-wheat flour, and is free of dairy, egg, soy, peanut/nut. Recipe 2 is free of gluten, dairy, soy, egg, corn, peanut/nut. They were a huge hit in our home, so I hope they are in your home as well. Thanks for hosting.
