Crustless quiche is a quick and easy gluten-free meal. It tastes just as delicious without a crust, and it is great for breakfast, lunch or dinner. This recipe is similar to the other crustless quiche recipe I have posted. We liked the addition of spinach to this one. My kids are not spinach fans, but if it is cooked and mixed in with something, they often like it. In fact, my spinach dip is one of their favorite appetizers.
This recipe makes two quiches. If you don’t need that much, cut the recipe in half or freeze one of them.
You could also make this quiche with a crust such as my pie crust or multi-purpose pastry dough.

| Crustless Hamburger Spinach Quiche |

- 1 lb. ground beef or sausage
- 1 small onion
- 1 pkg. frozen chopped spinach or 9 oz. fresh spinach
- 1 c. mayonnaise
- 1 c. milk (regular or substitute)
- 4 eggs
- 2 Tb. cornstarch
- 1/2tsp. salt
- pepper to taste
- 1 c. shredded cheddar cheese (can be omitted or use a cheese substitute for a dairy free version)
- Cook and drain the spinach. Use a spatula to press it against the sides of a colander and squeeze out most of the water.
- Brown the ground beef and cook the onion in a skillet. Drain any fat.
- In a large bowl, whisk together the mayonnaise, milk, eggs, cornstarch, and salt and pepper.
- Stir in the cheese, spinach, beef and onions.
- Pour into two greased pie plates.
- Bake at 350 degrees for 35 minutes or until the center is set.

Yum! I love quiche and my husband and kids are "iffy" about it. I usually make one and keep it in the fridge for my lunches. I can't wait to try this one. I do have a question, though. I'm not a fan of mayonnaise, is there something that I could use in place of that?
This really has no crust. I would make it again if it had a crust and I had to put double the cheese than the recipe suggested. Flavor was good but not very filling. I added garlic powder to the mix, as well. I would serve something on the side with it. 3 stars for flavor but the lack of crust didn’t do it for me. (Mooshy)
You can easily put this in any gluten-free crust. I have at times made it with a crust, both store bought frozen crust and home made. Here are a couple of crust recipes if you’re interested. Thanks for the feedback.

Try greek yougurt or something thick like maynoasie thats not tasteless.
I would try plain yogurt instead of the mayo. I have one son who dislikes mayo, but didn't notice it in the quiche.

This has nothing to do with quiche. But, have you ever glutened yourself with vanilla ice cream? I feel yuck today and it is the only thing I ate that was out of my direct control. Don't think I've ever had that be a problem though.
Jessie ~ I've never had trouble with vanilla ice cream. Sometimes it is just a mystery. I find I don't want to try the food again, though, if I think it might have caused a problem. I know that some of those foods were probably fine, but who wants to feel yucky?
Exactly! I think I did figure it out though. A couple mini milky way bars from a Valentines day dish at Bible study. I even read the label but according to their website only midnight milky way is gf

Did you know that mini and holiday specialty candy often times DOES not contain the regular ingredients. I found this out the hard way, I can’t remember what it was, but I called the company and was told that the regular size candy bars do not have the same ingredients at the mini & holiday candy of the same name :O(

You could use arrowroot starch or potato starch, but I don’t know about substituting for the mayo. I guess it would depend on what is in it that he can’t have.
Excellent! I added a little bacon, and I did put a crust on it. My family loved it. Next time I will make it without the crust.
My variation: Subbed a container of plain greek yogurt for the mayo, added in a clove of garlic to the beef and onion, mixed raw kale into the egg mixture, left the cheese out and just topped with a slice of swiss cheese and some nutritional yeast. IT WAS AMAZING. Thank you for the recipe!!

Thank you for your blog! I made a variation on this tonight…I used 1/4 c mayo and 3/4 c of 0% greek yogurt- and I didn’t have spinach,so I used broccoli…it was SOSOSO good! I will be using it again,next time with the spinach!
Oh we also added our fave spices, yellow curry powder and paprika…
